Sadly there isn't a whole lot else I can do to help, I'm not a JB admin either. If you need concrete evidence of something that someone said in chat, it's best to go to gameMe then select the right server (In your case Jailbreak NY) and then click on the players name in the list shown after the uptime graph. That way you get to their profile, where this is a "Chat" link on the right side below the statistics overview. Clicking that button will show you their chat history as it was recorded be the server.
