Is it open world or level based? I couldn't watch the trailer with sound but I will later.

In previous MH games it was a mix of both, there was an open world where you could hunt and collect ressources in and there were missions that would take you to different areas.

Sounds like the exact type if game I was looking for, is there grinding in it? For new and better weapons/armor?

Yes but not too much, you upgrade gear by using bones, skin etc from big monsters you hunt. So you'll have to kill those monsters a couple of times to gain their gear. On top of that you need to collect herbs, bugs, ore etc. but it's more gathering ressources than actual grinding. Big monsters can also be hunt in multiplayer which eases the "grind"
